We have transformed many a barn into a perfect space for entertaining (shared with your favorite horses, of course), with white twinkling lights, The Brandenburg Concerto and flowing champagne. Delicious stationary and passed hors d’oeuvres celebrate a new pony, new barn, new ribbons, and old friends! Prefer an amazing South American Asado (featured below) traditional BBQ or fire-roasted menu? Wash it all down with your welcome beverage of choice and artisanal ice cold beer. ASADOS Asado is a South American term used to describe a dramatic style of barbecue that is also a social event. Our asado usually consists of seasoned beef alongside various other meats, whole fish, potatoes, vegetables on a grill in an open fire pit called a Parrilla. The TRADITIONAL SOUTH AMERICAN MENU After appetizers, ribs are served. Next comes (flank steak), Matambre and possibly chicken and chivito (goat). Dishes such as Pamplona, (pork), and Patagonian lamb are also popular. Also included is hot bread, a fresh mixed salad with Verdurajo (grilled vegetables), a mixture made of potatoes, corn, onion, and eggplant cooked on the grill and seasoned with olive oil and salt. Cold beer, wine (sangria), lemonade, and soda are welcome beverages. Dessert is usually chocolate, flan and fresh fruit. A more authentic roasting style is to roast the whole animal usually lamb or pork. This is your option. It is a slow cooking method (sometimes 1-2 hours). When each item is done, it is immediately placed on the dining table, carved up for guests who apply Chimichurri and enjoy the amazing flavors. It is a feast you will never forget. Our set-up is South American style complete with the fire pit, colors, foliage and flowers and table settings that echo the lifestyle of a ranch experience on the Pampas.
